CHAMPS DU LIÈVRE is comprised of five individual plots, all benefiting of a “Cru Classé” denomination, at the foothills of the Montagne Noire in the land surrounding the village of La Livinière in Southern France. This small stone village and its hills and valleys have been a wine growing area as far back as the 2nd century B.C. and named "Cella Vinaria" (Wine Cellar), during Roman times. Today, this history and extraordinary terroir have made the Minervois the most dynamic wine-producing region of the Languedoc. La Livinière was awarded the AOC Minervois appellation in 1985 and the Cru Classé appellation, Minervois-La-Livinière, in 1999 as a result of its exceptional microclimate and geographical profile.
Our varietals of old vine Carignan, Syrah, Grenache Noir and Cinsault thrive in a terroir of Mediterranean aromatic scrubland known as “garrigue.” Wild thyme, lavender, juniper and rosemary, alongside holm oak, cypress, pine and fig tree cover the compact limestone and marl soil, which distinguishes the cru territory called Le Petit Causse.
The vines range from fifteen to over sixty years old and profit from sun-drenched days cooled at nightfall by the breezes sweeping down from the hills, which help preserve the natural balance of acidity and freshness of the wines.
Our plots are currently in organic farming conversion out of respect of the environment, soil and traceability to offer a wine produced as naturally as possible. All our grapes are manually harvested, selected and sorted directly at the vines in small bins to keep the grapes intact until they are vatted. Yields are kept low to ensure concentrated characteristics typical of the terroir.
CHAMPS DU LIÈVRE is artisanally made and bottled at our winery housed in an 18th century stone building located in the heart of La Livinière. We practice individual plot and varietal vinification in thermo regulated, small capacity stainless steel vats combining artisanal methods with the latest technology. Punching down of the grape cap and aeration during fermentation are manually done. We work with three of the top French oak barrel makers to adapt to the potential of each vintage.
